I made a batch of Spinach Tortillas yesterday, and cooked about half of them for our burritos for dinner last night. Today, I made breakfast burrito filling (turkey sausage, eggs, bell peppers, onions, corn, and cheese) and cooked the rest of the tortillas. I really, really like the spinach tortillas. I could even eat them plain!
Once again, I have stayed up past my bedtime. How does it get to be so late?! I guess I was doing something worthwhile... cleaning in the office! Yay! :)
We're having another busy week here. I have lots of things I want to do, just not enough time! I think it will always be like that. :)

Tammy, I don't know HOW you do it all! Your blog is such a help to me, and each morning when I take a look, there is something new! (I don't always officially log in, but I'm looking, anyway). I hear you saying you were up late again, so I guess that's when you squeeze in some time...I've tried quite a few of your recipes, the latest being the Apple Dip, which my husband LOVES!! I'll try the spinach tortillas soon! By the way, congratulations on cleaning your office! Cleaning and organizing my home office is an ongoing project ;) Another thing to mention--sorry, I'm not actually reviewing this recipe at the moment, but cramming other comments in :-)--I just discovered your videos, and love them! Office clutter
Just so everyone knows, she is cleaning my office ;) Her parts of the house are always really tidy, clean, and organized. They get some use but are always promtly picked up afterwards. My office on the other hand... well, it looks like I live in it. Because I do... and it is a contrast to the rest of the house to say the least! But I know where everything is (the "surface area filing approach") so I like to leave everything in their designated places! :P

I stay up way too late many nights... :) I'm trying to get on a better schedule though! :) We like to do videos, but it's tricky to find the time when the children are quiet (asleep!) and the sun is out (our camera has poor video lighting) and we're both home (since Joshua takes the videos). ;) Hopefully we can work more of them into our schedule, soon! :)

Robin, yes, you can use frozen spinach. Just thaw it first, and I would guess about 3/4 or 1 cup of spinach (with juice) for the recipe. :) Just add extra flour if needed! :)

tortilla storage
so i always bought tortillas from the store to use for wraps for my hubby's lunch. no more, as we can't find anything healthy enough anymore. it was always nice to have them in the fridge for a week or so, to grab 2 or 3 and make different wrap sandwiches. i make fresh tortillas to eat right away, and never have any left for anything. so i am wondering about making a batch ahead to store just for my hubby's lunches. how long do you think they will last in the fridge, and do you think they will stay fresh enough and not get hard? thanks! holly

I've only within the last 6 months started making tortillas. We just did without before! :-( I have printed your recipe. I was thrilled to see that it calls for FRESH spinach. Most recipes call for canned, frozen, or otherwise previously prepared spinach. I just can't get that. I'll let you know when I make these.

Holly, the softness of the tortillas depends on how long you cook them (mostly)... I like mine soft, so I don't cook them overly long. You can wrap the hot fresh tortillas in a damp dish towel as you finish them, and let them cool in there. That really helps them not dry out so much. :) I think the tortillas would last about a week in the fridge, but no guarantees on softness at that age, since we've never had any cooked tortillas last longer than a couple hours! ;)
