Our first-ever guest chef returns with chicken recipes!I'm pleased to welcome back our first-ever guest chef, Ruth Visser! Ruth's been an helpful participant from the start of TammysRecipes.com, and now she's back, with two yummy chicken recipes, which are perfect for using leftover chicken. The first recipe is Chicken Ceasar Wraps, a tasty tortilla with hot pepperjack cheese melted over chicken, stuffed with lettuce and Ceasar salad dressing. You can vary the type of tortilla and lettuce to suit your tastes. These wraps are quick and easy, and when Joshua and I tried them earlier this week, we loved them!! In fact, we ate them two days in a row. :) Here is a photo of the Chicken Ceasar Wraps with a spinach tortilla. So pretty and yummy!! :) Ruth writes, "I have a laptop computer, which is my most useful kitchen rescource. It spends most of its time on the cabinet next to my stove in the kitchen being my cookbook. :)" Ruth loves to cook, and describes some of her favorite cooking experiences: "While still living at home, my family would invite over 200 friends, family and neighbors over every December just for a time of good food and visiting. I did almost all the cooking. All year long I would compile recipes for cookies and appetizers. In November I would start baking hundreds of cookies to freeze in preparation. We did this for a number of years while I was still single and living at home and now my husband and I carry on the tradition in our own home. It not only gives me an excuse to do lots of cooking, but it gives us a chance to see many people we don't often get to visit much during the year." Ruth's next recipe is a Creamy Chicken and Broccoli Soup. ![]() About this Creamy Chicken and Broccoli Soup (which Ruth created herself), she writes, "I had made the condensed soup the other night with leftovers from the roasted chicken I made. To make the broth, I took the meaty chicken bones and boiled them several hours in water. (I did add generous amounts of the seasonings for flavor.) "My rating - with cheese 9.5/10. A good, hearty soup for those cold winter days!" As a mom to two little ones, Ruth has her system for getting dinner on the table each evening: "Usually I do my cooking in the afternoon while the children are both napping. If they are awake, I have them color or sit at the kitchen table doing other activities while I am cooking. I rarely make a single meal at a time, but instead double and triple recipes. I've been experimenting with the best methods for freezing food so that I can have something on hand for those extra busy days." Ruth, thanks so much for sharing!! :)
