A layered lasagna of pasta, chicken, cottage cheese, mozzarella cheese, and a homemade white sauce

6 servings

9 lasagna noodles, cooked according to package instructions
2 Tablespoons butter
1 clove garlic, minced
1/2 medium onion, chopped
2 Tablespoons flour
1 Tablespoon cornstarch
1 1/2 cups milk
1/8 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon basil
4 ounces cream cheese
1/3 cup grated parmesan cheese
8 ounces (2 cups) mozzarella cheese, shredded
1 cup cottage cheese
2 cups cooked cubed chicken
1/8 teaspoon oregano

1. In a large skillet over medium heat, melt butter. Saute onions and garlic until translucent. Add flour and cornstarch, stirring to mix. Add milk, pepper, salt, and basil, whisking until well mixed. Cook and stir until thick and bubbly.

2. Add cream cheese and reduce heat to medium-low. Cook and stir until cream cheese is melted. Add parmesan cheese, stirring to mix. Remove from heat.

3. In a bowl, combine 1 cup of the mozzarella cheese, the cottage cheese, and the chicken.

4. Grease an 8x8 inch baking dish. Put a layer of lasagna noodles in the bottom of the dish. Top with half of the chicken mixture. Put a layer of lasagna noodles on top of mixture. Top with half of the white sauce. Continue layering noodles, chicken, noodles, and sauce.

5. Top with remaining 1 cup of mozzarella cheese. Sprinkle with oregano.

6. Bake uncovered at 350 degrees for 30-40 minutes, until lightly browned.

I created this lasagna recipe because I wanted a completely white lasagna and didn't have a recipe for one. :)

This is a delicious, flavorful, creamy white lasagna! If you love chicken alfredo, or white sauces in general, you should try this lasagna. :) It's a nice change from regular lasagna -- I love it! My rating: 10/10

Yummy mistake
I was quickly making this dish for my husband to pop in the oven for the next night's dinner and I forgot to add the cottage cheese! Actually I was planning to use ricotta. So what happened was a layer of no boil noodles, sauce, chicken and mozz, repeat... But it turned out very well! I may not add the extra cheese since it was plenty flavorful and filling! Dh would like me to add some veggies next time to make it a balanced one-dish meal.

Excellent
I made this for supper tonight and it was so tasty! I only made an 8x8 pan (as the recipe calls for) and thought it looked a bit small as with the 'normal' lasagna I make a 9x13. I did have some sides with it but it was so rich and cheesy that it did our family (of 5) with 2 pieces left over. I was a wonderful change from the usual lasagna. I will be making it again, although not too often as it is rich and cream cheese up here in Canada is rather pricy. But a very nice classy dish for a special treat!

Oh my cheesy goodness!!
We had a casserole shower for a lady who is expecting and I thought I would try this recipe. I quadroupled it and made one for us (8 in our family) for Sunday dinner. It was so yummy!!! Not diet friendly but so, so yummy!!

Dynamite!
Terrific flavor and such a hit with my family of chicken lovers. Seriously, such a great recipe- it will become a regular in my rotation. It looked good (which is why I tried it:), but the flavor was even better than I anticipated. Thanks Tammy!

Yummy and Cheesy
This recipe was a big success with my family. I especially enjoyed how cheesy it is. I had some problems with it being runny when cut in small servings, but I also have that problem when using cottage cheese in regular lasagna. I think I will substitute ricotta next time, as it works with the other.

So Good!
Everyone in the family just loved this. I used ricotta cheese in place of the cottage cheese because I had some left over from the traditional lasagne I made last weekend. The flavor of this is wonderful. My children put dibs on the leftover pieces, which were all gone by the next afternoon.

Another big hit at my house
I actually had people fighting over who would get the last piece. This is so very good and not at all difficult to prepare. I usually prepare my meals while my kids are at school and this holds very well until it's time to heat it up.

It was such a different kind of lasagna! I doubled the recipe and put it in a bigger pan. I added extra garlic and used my house seasoning liberally on the onions while they were cooking. I added some left over sausage (left over from Tammy's Easy Pizza) and a little sharp cheddar. I also sprinkled the top with some crushed red pepper to give it a little zing and it just turned out so good. I would make it again for sure. My whole family really liked it, even my mother in law!hehe Thanks Tammy Shorty
