Farmhouse Chicken recipe

Here's a comforting cool-weather casserole treat: Farmhouse Chicken, courtesy of guest chef Nicole of Baltimore!

This easy baked dish features creamy, flavorful chicken breast chunks spread into a casserole dish and topped with stuffing. Farmhouse Chicken doesn't call for any canned "cream of" condensed soups, which is a plus, since Nicole likes to avoid MSG. :)

Nicole? Nicole? Ohhhh, Nicole... I think I know her. :wink: Although I've sure been missin' that girl lately. I wish she'd come back to us. :)

I've wanted to make that recipe for a while. Perhaps this is my nudge to just do it. One question though--is the cubed chicken cooked first? Or will it cook in the amount of time in the oven?

Looking at this picture reminds me... you can put this in a pan that's smaller than 9x13, because this one is. I don't know it's size, but I'd guess it's 8x11?

Now I'm hungry! ;)

sounds yummy but I wish there was a good substitute for the Stovetop (we avoid it because it contains MSG and transfat)

Ashleigh, yes, the chicken is cooked in the skillet/pan before it's baked. :)

Nicole, I'll add that to the recipe. And yes, we fixed the log-in problem months ago! At least, I hope so. :) And I miss you too, just like Ashleigh! :)

Anonymous, I make my own stuffing "mix", although I'm not sure it tastes exactly like Stovetop! :)

If you used your own stuffing... (not a stove top fan) is your stuffing dry or wet when you put it on top? Like does the stuff absorb the juice the chicken is cooking in?

Tammy, can you take the word "stovetop" out of the recipe. Even if I wrote that, I never use Stove Top... cause of the MSG.

Anonymous, this recipe calls for the stuffing to be made up according to the package instructions. I'm still, umm, working on that part of my recipe. Hopefully this week I'll be able to do some testing and decide exactly how my homemade stuffing mix should be re-constituted.

Nicole, I changed that part. :) Do you know any brands of stuffing mix that don't contain MSG? I've only ever looked at Aldi's kind, since I rarely need the boxed mix. I guess I gave up on a boughten stuffing mix that didn't have MSG in the seasonings.

But you know what, if you got a kind that had the bread in one bag and the seasonings in a separate packet, you could use the seasonings from my recipe and just substitute them for the seasoning packet. Hmn. I think Aldi's changed theirs to a pre-mixed thing though.

I'll just have to make extra homemade bread so I have some to dry for stuffing. :)

Sorry! I didn't see your question...

If you go to the section of your grocery store where there are bags of stuffing, many of those don't have MSG in them. Many times I've used stale bread and Italian seasoning. It's a flexible recipe. ;)

ps. I prepare the stuffing, so it's wet when I put it in the oven. If it went in dry, it would most likely burn and be too hard to eat! o_O
