I made these for breakfast
I made these for breakfast this morning and they were a big hit! Instead of using regular (soy) milk, I used (soy) egg nog and it really enhanced the flavor of the nutmeg and cinnamon. I also substituted 1/2 cup of the regular unbleached flour for whole wheat pastry flour to give them some added nutrition.
I too only got 10 out of the batter, not 12.
Even though I made these without the egg (I used Ener-G egg replacer) and used vegan, non-hydrogenated butter (Earth Balance), they came out perfectly! I will definitely be adding these to my own recipe file. Thanks!
