
I tried a new recipe today. It called for sweet potatoes cut into wedges and tossed with oil and seasonings before being baked.
They looked yummy. They tasted awful! They were soggy, too. I got a nice photo though. :D

As young wives, we have to live and learn by trial and error. My DH doesn't care if I make a mistake, but it bothers me I guess cuz I want everything to be perfect....

Try this
First try slicing them very thinly - VERY important. Toss with your oil & seasonings. I like to use taco seasoning, I know sounds gross, but it's good! Then bake in a very hot oven, at least 400 degrees for 10 min. Turn them over and bake for another 10 to 15 min or until they start to get crisp.
My family LOVES them cooked this way. I've had to adjust my methods because mine turned out mushy the first time I tried them too.

I make yam fries all the time! Our daughter cannot have potatoes but can have yams and sweet potatoes!
Our recipe is incredibly complicated :-)
Cut 1 large or 2 medium yams into nice french fry size.
Toss with olive oil
Bake at 400F for at least half an hour, usually 40 minutes. If the bottom starts to brown, just flip them.
For some reason this maintains a great sweet taste, and a similarity to home made baked french fries, not quite as crunchy.
We still have ours with ketchup.

These are a family favorite of ours as well. We like them mixed with olive oil and parmesan cheese, especially. We do tend to cube them more than slice them into "fries". I bake mine at 500 degrees for a half an our, they are nice and crisp.
I agree with the slicing thinly suggestion......
I make these all the time with olive oil and salt and pepper and slicing thin helps. A high temp of 400 is best I think and I love it when the edges start to carmelize. My oldest son thinks they're burnt and so we all end up with the parts we love I guess.

I just saw a recipe similar to this in that free food magazine that Kraft puts out. Did you happen to see it in there? They have some good recipes that are simple and fast for busy nights. I recommend it.

I'm still not exactly sure what I did wrong, because I did cut most of mine very thin. I also baked at 425 degrees, for about 35 minutes. The edges were getting black. I flipped halfway through baking. The recipe was from some Wal-mart flyer someone gave us recently.
Maybe I need to try different seasonings and a higher oven temperature! :) If I get brave and try them again, I'll blog about it. ;)

I tried making more of chip style (thinner round disks) and I found that the outsides burned before the fries were cooked. Maybe think more of a "steak fry" style of cutting???
Just a thought. I usually cut mine in generous sizes.

Thin sliced potato wedges...
Kristy, I did do mine into wedges... some were thin, some were a little thicker, like jojo potatoes would be. They were well-done inside... :)

recipe that works for us
Sweet Potato Fries from Quick and Healthy, 2nd Edition
4 medium sweet potatoes, peeled (about 4 oz. each)
1 tablespoon olive oil
Salt to taste
Preheat oven to 450 degrees.
Cut potatoes into half-inch slices or strips.
Place potato slices in a plastic bag with oil and shake well to coat potatoes evenly.
Spray a baking sheet with non-stick cooking spray. Arrange potatoes in a single layer and bake for 12-15 minutes or until golden brown, turning potatoes halfway through cooking.
Sprinkle with salt.
Good with a dipping sauce of sour cream and brown sugar. Makes 4 servings.
