
Layers of greens topped with dressing and shredded cheese!

1 medium head Romaine or Iceberg lettuce, washed and chopped
1 handful fresh spinach leaves, washed
2 cups cooked peas, drained and cooled
1/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon sugar, optional
dash black pepper
1 cup (4 ounces) shredded cheddar cheese
1. In a casserole dish (I like to use an 8x10-inch size, something just a little smaller than a 9x13), spread lettuce and spinach in a layer across the bottom. Sprinkle cooked peas on top.
2. In a small mixing bowl, combine sour cream, mayonnaise, sugar, and pepper. Dab the dressing mixture on the top of the salad, and when it is all on the salad, gently smooth it over with the back of a spoon to spread as evenly as possible.
3. Sprinkle shredded cheddar cheese over top. Cover and refrigerate until ready to serve.

This is a fun, attractive green salad side dish. You can easily add in chopped cooked chicken breast for some protein and extra nutrition, or make additions like chopped bell peppers, shredded carrots, or sliced cucumbers. Yummy and easy! :)
