Italian Scrambled Eggs
Scrambled eggs tossed with turkey pepperoni and topped with pizza sauce and mozzarella cheese

8 large eggs 1. Scramble eggs with sour cream. Fry eggs in a medium-large skillet over meduim heat until almost fully cooked. Add pepperoni and toss and stir for another minute, to heat through. 2. Reduce heat to low. Stir in pizza sauce. Spread eggs across bottom of skillet. Top with shredded mozzarella cheese. 3. Cover pan and allow to heat on low until cheese is melted. Uncover, sprinkle with parmesan cheese, and serve!

This is my favorite morning egg recipe! I absolutely love the flavor of the sauce with the eggs. I first had this at my uncle's house one morning, and thoroughly enjoyed it. We've been making our own ever since! You can adjust the amount of sauce and cheese to your liking. I leave out the pepperoni quite often, and don't usually measure the sauce. :) My rating: 10/10
