Italian Cream Cheese Chicken over Pasta

Italian-seasoned chicken and red pepper over linguine, topped with a cream cheese sauce

Yield: 

4-6 servings

Ingredients: 

4 boneless skinless chicken breast halves (about 1.25 pounds), cut into strips or bite-sized chunks
1 medium red bell pepper, cut into strips
1/4 cup sliced green onions
1 teaspoon Italian seasoning
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons apple juice, divided
1 package (8 ounces) cream cheese, cubed
1/2 cup milk
8 ounces linguine, cooked according to package instructions, and drained
Parmesan cheese, for serving (optional)
Additional Italian seasoning or chopped green onions, for garnish

Instructions: 

1. In a medium-large skillet, cook chicken, vegetables, and seasonings in butter over medium heat for about 10-15 minutes, or until chicken is cooked through, stirring occasionally. Add one tablespoon of the apple juice; simmer five minutes.

2. In a small saucepan over low heat, stir together the cream cheese, milk, and remaining one tablespoon apple juice until smooth.

3. Place hot linguine on serving platter; top with chicken mixture and cream cheese sauce. Sprinkle with Parmesan cheese and garnish if desired. Enjoy!

This is a delicious chicken and pasta recipe! Reading through the list of ingredients, it seems simple, but the taste is fabulous! It's easy to make, and if you're a pasta/sauce/chicken fan, then you'll love this!! :)

I didn't have green onions, so I substituted regular onions, thinly sliced. It worked great. I did toss in some dried green onions with the chicken, too. And, as you can see from the photos, I have made this with bell peppers that weren't red, and it was still tasty... though I do think red are the best. Oh, and one last thing -- I couldn't really taste the apple juice much, so I'm guessing if I didn't have apple juice, I would just use water. :)

I'm leaving the review for my sister since we both have the same
opinion on this recipe. :) One of my favourite chicken dishes! Red
peppers and Italian seasoning give this dish the perfect taste. One
other note I should mention is that sometimes Erin completely omits
the apple juice and we don't notice a difference in taste.

it was sooo good and sooo easy to make. i added a little garlic to the sauce (but i add garlic to everything) and it was perfect. thank you!

This was a really delicious dinner...my husband loved it and my 2 1/2 year old thought the cream cheese sauce was "yummy!" I thought that the red peppers added just the right flavor. The only thing I might vary it with in the future is to add a little minced garlic to the sauce. But it was really good without any garlic, too!

This was a bit of a pain to make. I only have two burners, but had to use three different pans (one for the sauce, one for the noodles, and one for the meat/vegetable mix) - not to mention I needed to use a pan for the peas I made with it. It was relatively easy to make, but took quite a bit longer to prepare than I expected. It tasted pretty good. I, personally, think the apple juice does give it a bit of flavor (maybe it's just the brand I used, though). I had to omit the milk because it turns out someone put the milk ALL the way in the back of the fridge... and froze it. So, it probably wasn't as creamy as it would have been otherwise. Still, I did enjoy it and probably will make it again. Who would have thought that a pasta made with cream cheese would be so good? Also, thought I would add that this recipe doesn't seem to make for much sauce. It was enough for two people when I prepared it, with just a little left over. I would probably use more cream cheese to stretch the sauce out a bit.

EDIT: Pretty sure it was just the brand of apple juice. I couldn't taste it the second time I made it. Likewise, I actually had milk on hand - so it turned out better. I'm switching my review from a 7/10 to an 8/10.
