Homemade Condensed Cream of Chicken Soup

A flavorful condensed cream of chicken soup base recipe for use in dishes that call for canned creamed soups

Yield: 

3 cups (about 2 cans)

Ingredients: 

1 1/2 cups chicken broth*
1/2 teaspoon poultry seasoning
1/4 teaspoon onion powder**
1/4 teaspoon garlic powder***
1/8 teaspoon black pepper
1/4 teaspoon salt (or less; taste to test)
1/4 teaspoon parsley
dash of paprika
1 1/2 cups milk
3/4 cup flour

Instructions: 

1. In medium-sized saucepan, boil chicken broth, 1/2 cup of the milk, and the seasonings for a minute or two (longer if using fresh onions or garlic).

2. In a bowl, whisk together the remaining 1 cup of milk and flour. Add to boiling mixture and continue whisking briskly until mixture boils and thickens.

Additional Notes: 

*I use the broth from my oven-roasted chicken. Refrigerate broth and then take fat off the top. If you're using chicken bouillon + water for your broth, you may want to add a little extra seasonings, such as lemon pepper, extra garlic, or seasoned salt, since my broth normally has bits of those in it. You can also add bits of chicken, but if you have good rich chicken broth, you probably won't need any chicken in it.

I think this is an excellent substitution for the store-bought cans of condensed soups. It's so flavorful (even without MSG)! ;) I like to make this with leftover chicken broth (or even turkey broth!) and then freeze in 1 1/2 cup sized portions. Then, when I need a quick "can" of soup for a recipe, I just thaw some! I have made this in large batches (3-4 quarts at a time) and it saves even more time rather than having to make a small amount each time you need some. My rating: 10/10.

Great Substitute

Relatively easy to make. I quadrupled the recipe so that I'd have plenty to freeze. Much healthier (no funny chemicals and I used WW flour) and cheaper than what you get at the store.

Thank You!!!

I just moved to France a few months ago and they don't sell cream of chicken soup in a can here. It's not until something's taken away from you that you realize you use it ALL THE TIME! My mom found this recipe for me and it's been working perfectly! I love it so much I'm sure I'll use this recipe instead of the cans once we move back home!

This recipe was very easy to whip up. I made my own broth using chicken stock cubes. I also used sliced onion and garlic paste. I made this chicken stock to layer in your chicken stuffing casserole. Totally delish. Thank You for sharing this.

This is wonderful, I hate using the canned stuff, but love the recipes that call for them, so I'm glad I found this! It is very thick though, it's definitely condensed. :)

Amazing

I just used this recipe (actually, the version you wrote out for the poppy seed chicken casserole recipe....the directions are a little different than this one) for making chicken spaghetti from the pioneerwoman.com/cooking/ website. You should definitely check out that recipe (and the rest of them)....it was fantastic! I couldn't believe how easy it was to make my own cream of chicken soup and it was delicious. Plus that it's inexpensive and healthy...you can't beat it. Thank you so much for this wonderful recipe!

This is FANTASTIC!

I must admit...I have used canned condensed soups all of my cooking life. I didn't know there was a better way! I am so tickled I took the time to try this recipe because it is so delicious! Fantastic !!

I am so happy to find this recipe. I often buy bone-in chicken breasts on sale and cook them up for their meat which I freeze in 2 cup portions. I always save my broth but forget about it and I always reach for the canned soups instead of making my own sauce but not anymore. I went ahead and made a few batches to freeze and the next time I have a bulk cooking day I will make more. No waste, low cost, great taste and no ingredients my family can't have. I used this recipe in the Cheesy Potatoes and my family went crazy over them. Another good job.

So easy!

I just made the roasted chicken and the soup. I wanted to make the soup right away, so I just put it in a glass measuring cup and skimmed the fat off with a ladel. It worked really well and came out great! I am so excited about being able to make my own instead of buying it!

I always use this instead of the store-bought

It's been a couple years since I've had store-bought condensed cream of chicken soup, so I don't know how identical this is to what's sold in a can.
