Homemade Condensed Cream of Chicken Soup

A flavorful condensed cream of chicken soup base recipe for use in dishes that call for canned creamed soups

Yield: 

3 cups (about 2 cans)

Ingredients: 

1 1/2 cups chicken broth*
1/2 teaspoon poultry seasoning
1/4 teaspoon onion powder**
1/4 teaspoon garlic powder***
1/8 teaspoon black pepper
1/4 teaspoon salt (or less; taste to test)
1/4 teaspoon parsley
dash of paprika
1 1/2 cups milk
3/4 cup flour

Instructions: 

1. In medium-sized saucepan, boil chicken broth, 1/2 cup of the milk, and the seasonings for a minute or two (longer if using fresh onions or garlic).

2. In a bowl, whisk together the remaining 1 cup of milk and flour. Add to boiling mixture and continue whisking briskly until mixture boils and thickens.

Additional Notes: 

*I use the broth from my oven-roasted chicken. Refrigerate broth and then take fat off the top. If you're using chicken bouillon + water for your broth, you may want to add a little extra seasonings, such as lemon pepper, extra garlic, or seasoned salt, since my broth normally has bits of those in it. You can also add bits of chicken, but if you have good rich chicken broth, you probably won't need any chicken in it.

I think this is an excellent substitution for the store-bought cans of condensed soups. It's so flavorful (even without MSG)! ;) I like to make this with leftover chicken broth (or even turkey broth!) and then freeze in 1 1/2 cup sized portions. Then, when I need a quick "can" of soup for a recipe, I just thaw some! I have made this in large batches (3-4 quarts at a time) and it saves even more time rather than having to make a small amount each time you need some. My rating: 10/10.

It's been a couple years since I've had store-bought condensed cream of chicken soup, so I don't know how identical this is to what's sold in a can. I just made the roasted chicken and the soup. I wanted to make the soup right away, so I just put it in a glass measuring cup and skimmed the fat off with a ladel. It worked really well and came out great! I am so excited about being able to make my own instead of buying it!

I am so happy to find this recipe. I often buy bone-in chicken breasts on sale and cook them up for their meat which I freeze in 2 cup portions. I always save my broth but forget about it and I always reach for the canned soups instead of making my own sauce but not anymore. I went ahead and made a few batches to freeze and the next time I have a bulk cooking day I will make more. No waste, low cost, great taste and no ingredients my family can't have. I used this recipe in the Cheesy Potatoes and my family went crazy over them. Another good job.

I must admit...I have used canned condensed soups all of my cooking life. I didn't know there was a better way! I am so tickled I took the time to try this recipe because it is so delicious! And easy as pie! Thanks, Tammy for such a GREAT recipe. I made quite a few batches for my freezer. I'll never use canned cream of chicken again :)

I just used this recipe (actually, the version you wrote out for the poppy seed chicken casserole recipe....the directions are a little different than this one) for making chicken spaghetti from the pioneerwoman.com/cooking/ website. You should definitely check out that recipe (and the rest of them)....it was fantastic! I couldn't believe how easy it was to make my own cream of chicken soup and it was delicious. Plus that it's inexpensive and healthy...you can't beat it. Thank you so much for this wonderful recipe!

This is wonderful, I hate using the canned stuff, but love the recipes that call for them, so I'm glad I found this! It is very thick though, it's definitely condensed. :)

This recipe was very easy to whip up. I made my own broth using chicken stock cubes. I also used sliced onion and garlic paste. I made this chicken stock to layer in your chicken stuffing casserole. Totally delish. Thank You for sharing this.

I just moved to France a few months ago and they don't sell cream of chicken soup in a can here. It's not until something's taken away from you that you realize you use it ALL THE TIME! My mom found this recipe for me and it's been working perfectly! I love it so much I'm sure I'll use this recipe instead of the cans once we move back home!

Relatively easy to make. I quadrupled the recipe so that I'd have plenty to freeze. Much healthier (no funny chemicals and I used WW flour) and cheaper than what you get at the store.

I've always avoided recipes with cream of chicken due to the unhealthy ingredients. I also quadrupled it and froze some and it works excellent. Now, how about a substitute for cream of mushroom? Please?!

Thanks for this, I don't know why I never thought to look for a recipe for it, but I stopped ever using the store bought stuff, because it didn't agree with me. I'm thinking it's the milk in it, as store bought milk doesn't agree with me either. However since we have our own cow (and goats) we get fresh milk that does agree with my system, so now I can make recipes that call for cream of chicken soup again!! Thanks so much!!

Good flavor, and I love that I don't have to feel guilty about cooking recipes that call for condensed soups! I usually avoid them because of the fat content and MSG and such, but I have no qualms about eating a homemade version with whole wheat flour and raw milk. THANK YOU for the awesome alternative!

I just made this and it was sooooo good! I can't believe how you got the spices so close to the original, but brighter and better! FINALLY a replacement for store-bought canned soup. Works GREAT in my poppyseed chicken casserole recipe. Didn't say anything to the family and they loved it. Now to find a version for cream of mushroom. I cooked my chicken carcass, with seasonings, in the crockpot overnight then made several batches of the soup in the morning. So handy to just pull out of the freezer when it is needed.

Do you have any suggestion for a gluten-free substitution? Tapioca flour, maybe? My daughter *loves* Hash Brown casserole, but she has IBS and has to avoid wheat.

Paula73, just use a gluten free flour mixture in place of the wheat flour. I have used a mixture of brown rice and corn starch and it works just fine. Using only starch in it would probably work as well but use less, maybe mix a 1/8c with a bit of milk and add to the soup. Adding more starch that is mixed with milk as necessary to get to the right thickening. If you get too much starch it will be lumpy and like a big glob of soup. I know this from experience. :)
Oh, make certain your broth, if purchased, does not have wheat or gluten in the mix. Many do!

This cream is awesome! I was making a recipe that called for 2 cans of cream soup, which I can't use because of MSG. Usually I would just make up the recipe as I go along, but I wanted something more trustworthy since I was having company. I followed this recipe and it was awesome! Loved it! Thank you, Tammy.

I make Green Chili Enchiladas, and I use cream of chicken as my base for the sauce and this saves me money and taste great. I use what I need and freeze the rest. Wow I am loving it.....

I have been looking for a good cream of chicken soup recipe. I will be using clear-jel for the thickener instead of flour. I LOVE clear-jel for thickening my cream of mushroom soup and cream of celery soup that I have canned. I just add the milk when ready to use. Gonna try canning this too without the milk and using clear-jel to thicken. I like the clear-jel because it thickens while/after it cools. I will definitely have to play around with the liquid to see how it cans.

I made this with Red Bob GF flour blend and plain coconut milk and I also added in 1/4 cup of finely chopped chicken. It was wonderful! I will make this up x10 batch to can for ready to use cream of chicken soup. I had been using a recipe using pureed white beans with chicken and broth but this taste much better!
