Grilled Salmon Fillet

Grilled Salmon Fillet

Moist seasoned grilled salmon, with a salty, smokey flavor

Varies, depending on size of fillet

Salmon fillet, fresh or thawed
liquid smoke flavoring (we put into small spray bottle)
lemon juice (optionally, squeeze fresh lemon slices onto salmon)
hickory smoke salt
seasoned salt
garlic salt
oil (in spray bottle)
pepper
paprika
lemon pepper
sage
basil
marjoram
butter, sliced

1. Lay salmon fillet, skin-side-down, on flat surface. Apply seasonings in order listed.

Seasoned salmon, before grilling

2. Grill according to grill directions for temperature and time.

Our Weber grill says for fish fillet:
1/4-1/2" thick     3-5 minutes High
1/2-1" thick        5-10 minutes High
1-1 1/4" thick     10-12 minutes High

Fish is done when the inside flakes easily with fork.

Note: Salmon steaks typically cook well directly on a grill but you may need to cook fillets on a surface that you can be put on the grill and later removed, e.g. a grill grid like this. This will prevent sticking, but you may need to increase grilling time to compensate.

Alternately, bake in a greased glass baking dish, skin-side-down, at 425 degrees for 15-20 minutes.

Joshua created this recipe, and this is the best salmon I have ever eaten! Everyone who has tried Joshua's recipe has been pleasantly surprised at the delicious flavor, even those who normally don't enjoy fish. It's so tender, and the smokey flavor is perfect! This salmon is probably my absolute favorite of all the meats Joshua grills. It's that good. My rating: 10/10

A fish recipe even fish-haters can enjoy (10/10)
I really like fish so I am a little biased. I don't like overly fishy tasting seafood, but for the most part fresh fish ranks high on my preference list. The problem is many people seem to dislike fish, and Salmon specifically has a bad reputation. Chalk it up to all those bad salmon patty recipes out there.

This recipe is different. We have had many people over for dinner who professed a dislike for salmon to come away from the meal saying they never knew fish could taste so good.

Part of this is presentation. This recipe (fillet) looks pretty and colorful, yet salmon steaks are even better with seared grill marks crossing the flesh of the meat, giving them that hardy, "Grilled" look. It is hard to associate a sizzling hot piece of meat with pretty colors and mouth watering grill marks with fish-mashed patties. The other part is the flavor. I have worked hard finding the right spices and seasonings to turn out a consistantly smokey flavored fish with the right accents to add flavor and moisture while adding the right tastes to cover the slight fishy taste most people tend to dislike.

The result is a fish dish that has more in common with smoked salmon than with fish patties. We have heard a number of people say, "I don't like fish except Joshua's grilled salmon". This recipe is a real crowd pleaser, easy to make, and is a good way to sneak a couple servings of fish into your weekly schedule. This is probably Tammy's favorite food that I grill and whenever I say, "I think I am going to grill" she says, "Salmon?" hoping to convince me to thaw out some fish. If you have a hard time warming up to fish, especially salmon, give this recipe a try.
