Easy Beef Pepper Steak with Rice

Easy Beef Pepper Steak with Rice

A beefy red, yellow, and green pepper steak recipe, full of flavor, served over rice

4-6 servings

1 to 1.5 pounds sirloin steak (or other steak), cut into thin 2-inch strips
1-2 Tablespoons oil
2 onions, sliced into 2-to-3-inch slices
1 large clove garlic, minced
2 tomatoes, diced
1 green bell pepper, sliced into thin, 2-inch slices
1 red bell pepper, sliced into thin, 2-inch slices
1 yellow bell pepper, sliced into thin, 2-inch slices
1 cup beef broth
1/2 teaspoon salt
2 Tablespoons soy sauce
1/2 cup cold water
2 Tablespoons cornstarch
3-4 cups of hot cooked rice

1. In large skillet or stock pot, fry steak, onions, and garlic in oil over medium heat.

2. When onions are starting to turn translucent and steak is partially cooked (still some pink), add tomato, beef broth, salt, and soy sauce. Cover and simmer for about 10 minutes, until meat is tender.

3. Add bell peppers and stir to mix them in. Cook for about 5 minutes, until peppers are crisp-tender, or almost as cooked as you prefer.

4. In small bowl, whisk together cornstarch and water. Add to pepper steak pan, stirring to avoid lumps and cook until mixture thickens. (Boil/simmer for about 3 minutes.) Serve over hot rice.

Tammy's Review:

This was my mom's recipe for pepper steak, and I really like it! I changed a few things, like adding colored peppers instead of just green ones. I love the flavor of this dish. The tomatoes add a nice twist to the "gravy" part, too! And, it's pretty easy to make. My rating: 10/10.

The pictures just don't show how good it tastes!! :D See the recipe above for my complete review! Thanks! ~Tammy

Honestly, I am not a good cook. I need everything dumbed down for me. I love the Beef Pepper steak from the Chinese place and have always wanted to cook it. I searched for a recipe and Tammy's Recipes was at the top with "Easy" on it - LOL. So, I made it last night and I'm telling you it was good. My husband said it might be the best thing I've ever made and we have been married 18 years. I followed the exact recipe above and it had the best flavor. I highly recommend making it. I will definitely be making it again.

Just finished having this for dinner tonight. It is so good! The only change I made was adding Chicken Stock instead of Beef stock, because that is all I had on hand.
