Easy Baked Oatmeal

Easy Baked Oatmeal

Moist and crusty baked oatmeal breakfast, served with warm milk

6 servings

1 1/2 cups quick oats
1/4 cup wheat germ
1/4 cup ground golden flaxseed*
1/3 cup sugar
3/4 cup milk
1/4 cup butter or margarine, melted
2 eggs
1 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon vanilla
Warm milk
Fresh fruit (optional)

1. Combine the first ten ingredients; mix well.

2. Spread evenly in a greased 9 x 13 baking dish. Bake at 350 degrees for 25-30 minutes or until edges are golden brown and top is crusty.

3. Immediately spoon into bowls, add milk, and top with fresh fruit if desired.

*Or substitute cornmeal or grain of your choice

This is a fun variety to serve for breakfast. I think it tastes delicious, and is good leftover with cold milk (instead of warm), also. Perfect for chilly winter mornings, and a favorite with children. My rating: 10/10

My family loved it!
Everyone really enjoyed this. The only thing is - is there a typo in the recipe? I had nowhere near enough batter for a 9x13 and baked it in an 8x8. Did I do something wrong?

I fed this to 4 men and myself on Saturday. Men ages 3 and 38 said "yum" and 38 year old ate 2 bowls full. Man age 1 said "pbbbbttthhht" and crumbled it on his highchair. Man age 79 said "This was good but don't you ever use sweetener?". I (no age given, LOL) thought this recipe was tasty, albeit not terribly sweet. However, it was very yummy COLD with peanut butter on it like a brownie. Next time I think I'll up the sugar or use brown sugar or honey and maybe add raisins into the mix before baking. Poppa prefers his oatmeal breakfasts a bit sweeter so to Poppa's tastes we shall cater... As for man, age 1, and his review... he eats rocks so his opinions are to not to be taken seriously... Katie
