Moist and chewy, these rich chocolate cookies are bursting with cocoa and chocolate chips!
4 dozen cookies
2 cups sugar 1. Cream together first three ingredients. Add remaining ingredients and mix well. 2. Spoon onto ungreased cookie sheets. Cook for 8-12 minutes at 350 degrees, until cookies are just done but not well-done. Overcooking will make them dry and hard. Cookies will flatten as they cool. Leave on pan for a few minutes before removing to cooling racks, or they will fall apart. This recipe was submitted to TammysRecipes.com from Isylla C. She adds, "Take two baked cookies off pan immediatley; put an "after eight" mint on one cookie and then put the cookies together, like a sandwich. It is very good, but very addictive!"

Even Joshua, who normally isn't as crazy about chocolate as I am, gave these cookies an enthusiastic "10!" and said this recipe was excellent!
