Creamy Dijon Grilled Cheese Sandwiches

A creamy, tangy twist on traditional grilled cheese sandwiches!

4 sandwiches

1 ounce cream cheese, softened
2 tablespoons Dijon mustard
8 slices whole wheat bread
6 ounces (1 1/2 cups) shredded sharp cheddar cheese

1. Lightly butter one side of each slice of bread.

2. Stir together cream cheese and mustard until creamy. Spread evenly on four of the slices of bread. (Spread on un-buttered side.)

3. Top slices with equal amounts of cheese. Put remaining bread slices on top, butter-side up.

4. Heat a large skillet over medium heat. Cook sandwiches, two at a time, for about 3-4 minutes per side, until golden brown.

Yum!
Made this for an easy dinner tonight, along with some oven fries and squash. Loved the taste!! We actually didn't have any cream cheese so I used plain yogurt instead, but it was still really good. We loved the dijon taste.

I thought this was so yummy!! I loved the change from the plain grilled cheese sandwich. But I have to say that my husband and little boys did not like it. )-: I should have known better because I am the only one who likes mustard!! So I have slowly been eating their leftovers and still love this sandwich.

Yum!!!
These are delicious! We had them for the first time a few months ago and they have become a favorite lunch sandwich. Even my five year old who really dislikes grilled cheese sandwiches loves these and I love that you get to use "real" cheese in them :). This is a little embarrasing to admit but I had never considered making a grilled cheese sandwich with anything other than American cheese before! That in itself makes a huge improvement in the taste :).
