Italian Pasta Salad

Spiral pasta tossed with veggies, chic peas, parmesan cheese, and Italian dressing


12-14 servings


16 ounces rotini or spiral pasta
1 can (15 ounces) black olives, sliced
4 green onions, chopped (including green part) OR 1/4 cup finely chopped red onions
1 can (15 ounces) garbanzo beans (chic peas), rinsed and drained
1 green, red, or yellow bell pepper, chopped
2 cups diced fresh tomatoes
2 cups diced peeled cucumbers, optional
1/2 to 3/4 cup parmesan cheese (I prefer shredded parmesan)
8 to 12 ounces your favorite Italian Salad dressing*


1. Cook pasta according to package instructions. Rinse with cold water.

2. Combine all ingredients in a large bowl, tossing to coat and combine.

3. Cover and refrigerate for about 2 hours, to allow flavors to blend.

Additional Notes: 

*Original recipe specified to use Wishbone (brand) Italian salad dressing, but I use Kroger brand and love it! :) I've also had great results using a couple different kinds of Italian dressing purchased at Costco.

This recipe was passed to me from my friend Sheri, who got it from her sister Debby.

It was different than the other Italian pasta salads I have tried.I
liked the combonation of veggies that were in it.I thought it needed a
littl more dressing.I used shredded parmesan cheese.I shared some with
the neighbors since it made a big batch and they liked it too.

This salad is a winner! I made a few adjustments so I could call it "my own" recipe at a family picnic. ;) I used chopped sun-dried tomatoes, tri-color rotini pasta, red and yellow chopped peppers, and added 3 tbsp italian seasoning. Everyone just ate it up! It's really nice for outdoor events because unlike salads with mayo or cream-based dressings and/or egg, this doesn't separate or spoil at room temperature for a couple hours. Thanks!
