Cilantro Chicken with Avocado Salsa

Spicy grilled chicken breast served with a fresh salsa made with tomato, avocado, and green onions

Yield: 

4 servings

Ingredients: 

Chicken ingredients:

4 large (6-8 ounces each) boneless skinless chicken breasts
salt
black pepper
1/4 cup fresh finely chopped cilantro
oil, preferably in a spray bottle
Tapatio hot sauce

Avocado salsa ingredients:

2 cups chopped fresh tomato
4-5 green onions, chopped
1/2 cup fresh chopped cilantro (or more, to taste)
1 tablespoon fresh lemon or lime juice
1/4 teaspoon salt
dash black pepper
1 large avocado, finely chopped (about 3/4 cup)

Instructions: 

1. Lay chicken breasts in a 9x13-inch dish. Sprinkle with salt, pepper, and cilantro; spray with oil and splash with Tapatio. Turn chicken over and repeat on other side. Set aside.

2. Combine salsa ingredients (except avocado) in a medium bowl and stir to mix. Add avocado and stir gently to combine. Set aside.

3. Preheat grill.* Grill chicken until done (our Weber Q grill takes 10-12 minutes on medium, grilling with lid closed). Serve hot chicken with fresh salsa.

*Alternately, you can grill the chicken on the stovetop or on a Foreman Grill.

I love this fresh, flavorful way of serving simple grilled chicken breast! If you love cilantro and fresh salsa, you'll love it paired with the grilled chicken for a quick but beautiful dinner! :) The Tapatio hot sauce splashed onto the chicken makes it spicy, which is perfect since the salsa is not spicy. My rating: 10/10 -- simple, pretty, and yummy! :)

This is such a wonderful way to grill chicken! I made the salsa a few hours before dinner and had some on a rice cake as a snack. Delicious! I was a bit too timid with the Tapatio, but it was fabulous anyway. Completely fresh and yummy!

This was really a nice flavorful meal.I loved the taste of the hot sauce on the chicken after it was grilled.I made ours with brown rice.I prefer white but we are eating healthier and eating brown rice now.My salsa did not look as pretty as yours.It was a little more jucier from the tomatoes.The flavor was good.Rick loves Cilantro and I usually leave it out of things for me except for one recipe I like it in.I did use Cilantro in the salsa and was worried I might not like it.I loved it.I told Rick this is a new summer meal.You can nuke the rice,grill the meat and not heat up the house.Thanks for another great recipe.

This is my new favorite recipe for grilled chicken. The hot sauce and cilantro make for a really flavorful chicken. I like to dice mine and heat some corn tortillas to wrap around the chicken and fresh salsa!

I made this for my new beau last week and he raved. He said I could make this for him once a week and he'd never complain. It was quite delicious. I also pinned this recipe on pinterest and it got a lot of repins. =) I did substitute red onions for the green onions only because that was what I had on hand. Either way, I'm sure, is great. Thanks!

This is Good without the cilantro ( I had none). My kids actually liked it and that is saying alot! I also used corn tortillas freash cooked from the pan and made them into a type of toco or fajetas. Also, my rice was a combonation of brown and white and I added chicken broth and onions while it cooked!
