Chocolate Chip Muffins

A light muffin sprinkled with chocolate chips

10 muffins

1/2 cup (1 stick) butter, softened
1/3 cup sugar
3 tablespoons brown sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup milk
1 cup semi-sweet chocolate chips

1. Cream butter and sugars. Add eggs, stirring to mix. Add milk and mix well.

2. Combine flour and baking powder. Add to wet mixture, stirring just to moisten.

3. Put half of the batter into 10 greased or paper-lined muffin cups. Sprinkle chocolate chips on top and finish filling the muffin cups.

4. Bake at 375 degrees for 23-25 minutes or until lightly browned and muffins test done. Let stand in muffins tins for 5-10 minutes before removing to wire rack to cool.

This chocolate chip muffin recipe is like enjoying a chocolate chip cookie... without all the extra calories! These muffins are easy to make and are a great snack. They can be frozen and used in packed lunches, as well. They are not as sweet as chocolate chip cookies, but still very good. My rating: 8/10

not too sweet muffin that kids loved!
I made these for snack day at my daughter's school. Not even one came back, and my daughter ran out to the car and said everyone loved the muffins! These are not too sweet, which I love!

Everything I'd hope to find in a chocolate chip muffin!
Very easy to mix up, with good consistency. After tasting the batter I did add some vanilla and salt, which I preferred. It was a hit at my house! :-)
