Best Chicken Pot Pie

A flavorful homemade chicken and vegetable pot pie with a flaky cream cheese-celery seed crust

Yield: 

6 servings

Ingredients: 

1 Tablespoon butter
2 garlic cloves, minced
1/4 cup diced onion
2/3 cup sliced or diced carrots
1 teaspoon salt (or more, depending on taste)
1/4 teaspoon pepper
1 1/2 cups chicken broth
2/3 cup frozen peas
2/3 cup frozen corn
2/3 cups milk
1/2 cup flour
2 cups cubed cooked chicken

Crust Pastry Ingredients:

1 2/3 cups flour
2 teaspoons celery seed
8 ounces cream cheese, cubed
1/3 cup butter

Instructions: 

1. In saucepan on stove top, combine butter, garlic, onion, carrots, salt, pepper, and chicken broth. Bring to a boil and simmer until carrots are tender.

2. While initial mixture is cooking, combine pastry ingredients, kneading until thoroughly mixed. (I use my hands for this sometimes.) Wrap in plastic wrap and chill.

3. When carrots are tender, add peas and corn and simmer for about 5 more minutes. Whisk together the flour and milk. Add to boiling mixture and return to a boil, stirring constantly; boil for 1-2 minutes or until thickened. Add chicken and stir. At this point I like to taste the filling to see if it has enough salt!

4. Using flour as needed, roll 2/3 of your pastry dough into a 12-inch square. Transfer to an 8-inch square baking dish. Pour filling into crust.

5. Roll remaining dough into a 9-inch square. Cut vents for steam to escape, and place top crust over pie. Trim edges. Wet crust edges using fingertips dipped in water, and then crimp to seal.

6. Bake at 425 degrees for 30-35 minutes or until crust is golden brown and filling is hot and bubbly.

This is a delicious homemade chicken potpie recipe! The cream cheese and celery seed in the pastry add a unique flavor, which we love! I have also doubled this recipe and used a 9 x 13 dish, when making this for more people. It worked just as well that way! We love this meal. My rating: 10/10

This was delicious. My whole family loves chicken pot pie. All the recipes I found used cream of "something" soup and we do not like that taste so I always bought Pepperidge Farm (PF) pies. I am so excited to finally have a homemade recipe that is even better than PF.

My son had been requesting chicken pot pie. Not sure why, an out of the blue thing. I had a brick of cream cheese so I thought I would give it a try. Mine didn't turn out as pretty as Tammy's but it tasted wonderful. I always freeze my extra vegetables so I pulled those out to use and they worked perfectly. Next time my son wants to make little individual ones. I can't wait till my husband gets back from his stint overseas so I can try it out on him.

I'd never made a chicken pot pie before but I have been a meal-making rut and decided this was a good option for something new. I was surprised at how easy this was, not to mention the fact that it is delicious! I imagine I will be making it again. :-)

This was so good- another recipe I made for a night when I wasn't there to enjoy it fresh from the oven, like my family did. The warmed up bowl I made myself later was great stuff!
I added a little tarragon to the filling since I am a terrible salter- either too much or usually not enough. I wanted to be sure I had enough flavor in it- and I love tarragon.
I will make again- very homey and comforting!

Chicken Pot Pie is my hubby's favorite, and he said this is the best one I've ever made! Honestly, I didn't make it a lot since good homemade pie crusts are such a pain in the patootie, and the store bought ones are horrible for you and don't taste like much. This crust was fantastic, and easy!

I didn't have Poppy Seeds for the crust, but I substituted a favorite Greek spice blend for a nice peppery savory crust. Yummmm...

I made this recipe with cooked diced pork roast and beef stock instead of chicken. I doubled it making one for the freezer. It was delicious and my picky family loved it. Thanks for another home run!

This is the best chicken pot pie recipe I've come across yet. I haven't made chicken pot pie very often because I've always ended up being disappointed by the recipe. But when I saw Tammy's recipe, I knew I had to try, because her's never fail. Sure enough- we loved it! I mixed out some of the veggies, because I didn't have carrots....instead I added potatoes and green beans. Next time, I'll make sure to have carrots on hand, and keep the green beans as well....but omit potatoes.

Thanks for this recipe. It was my first time making a potpie and my first time making a crust for anything. So, considering that, it turned out pretty good. I will definitely be making it again, maybe with a little less celery seeds. Cut up the pieces and put some in the freezer for meals at work. Thanks!
